RECIPE:
- 2 cups milk chocolate chips
- 3/4 cup crunchy peanut butter
- 1 1/2 cups salted peanuts, chopped
- 1 (10.5-ounce) package miniature marshmallows
- 1 (16-ounce) container cherry frosting
Melt chocolate chips and peanut butter on low power in the microwave. Stir well and add chopped peanuts. Spread half of the chocolate mixture in a 9 by 13-inch glass pan sprayed very lightly with cooking spray. Refrigerate 20 minutes.
Melt Marshmallows in the microwave on low power; stirring every 20 seconds. When melted and smooth, stir in the frosting. Spread this mixture carefully on top of the chocolate layer. Let cool in the fridge for 30 minutes. Top with remaining chocolate. If chocolate has set up a little, microwave it for about 30 seconds on low power and stir well. Be sure to spread each layer to the edges of the pan.
Refrigerate until firm. Cut into pieces. Makes about 48 pieces.
This recipe was snagged from the "A Year With Six Sisters' Stuff" cookbook and boy is it yummy. I have a sweet tooth like many of you, so this yummy treat hits the spot. Perfect for summer! And if you haven't noticed, I haven't posted in FOREVER, so here's to a fresh start at blogging :)
